Keep-alive does not keep the connection alive

yes, the Sever has a dynamic IP.

Which entry are you refering to?
I assume
Endpoint = Dyn.IP:51820

Yes, but otherwise, the connection would not even be established, right?

For reference, here the complete client config:
[Interface]
Address = 10.192.122.3/32
PrivateKey = xx=

[Peer]
PublicKey = yy=
Endpoint = Dyn.IP:51820
AllowedIPs = 0.0.0.0/0
PersistentKeepalive = 25
